Joyce's famous Whit Walk Raspberry Buns 

Imperial (makes 12)

8oz Self Raising Flour

4oz Margarine

4oz Sugar

1 Egg

Vanilla Essence

Raspberry Jam

Metric (makes 12)

225g Self Raising Flour

115g Margarine

115g Sugar

1 Egg

Vanilla Essence

Raspberry Jam

  • Put Self Raising flour and margarine into a mixing bowl and rub the margarine into the flour until it resembles fine breadcrumbs

  • Add the sugar and mix well

  • Beat the egg in a separate small bowl and add 4/5 drops of vanilla essence.

  • Make a well in the centre of the flour mixture and pour in the egg/vanilla

  • Mix to a soft dough, Turn onto a lightly floured board and knead evenly until smooth .

  • Cut the dough into 12 evenly sized pieces and roll them into balls (put some flour on your hands to stop them sticking)

  • Place the balls on a greased baking sheet leaving room for them to expand, flatten them a little.

  • With a floured finger make a hole in the middle of each bun taking care not to go too far in

  • Fill the holes with Raspberry Jam,Brush round the jam with a little milk to help stop the Jam from boling out

  • Bake in the centre of a moderate oven (Gas Mk5/190 C/375 F until firm and golden
